ClayPot Rice

Claypot rice, also known as "Wabo Rice", is a signature dish from Guangdong Province, China. There are various types of this dish, including waxed meat claypot rice, shiitake mushroom and velvet chicken claypot rice, spare ribs claypot rice, and beef claypot rice. Fresh rice is cooked on-site for claypot rice. When the rice is cooked, waxed meats, meats, or other ingredients are placed on top of the rice. The steam from the cooking process steams the ingredients, allowing their flavors to seep into the rice, creating a unique taste. According to the traditional cooking method, a ring of golden brown crust forms around the claypot rice, achieving a crispy outer layer and a soft interior. (As each portion of rice is freshly cooked, the wait time is at least 15 minutes.)
